Recipe developer and author, Candice Walker, shares with us her recipe for tasty chicken tacos and crispy french fries.

Candice’s food blog, Proportional Plate, is dedicated to encouraging you to eat exactly what you want and to feel confident in that decision. Candice shares her knowledge about eating sustainably and teaches us how to create and enjoy delicious, seasonal, balanced meals that make you feel good. Her recipes are influenced by international and fusion cuisine, inspired by her year spent travelling the world and her own heritage.

Candice’s chicken tacos are marinated in citrus juices, garlic, honey and spices for incredible flavor. The marinade has a great balance of acidic, sweet, and spicy and infuses such an amazing taste into the chicken. The marinade helps break down the chicken to make it tender, and also serves double duty as a wicked dipping sauce for the fries! The marinated chicken thighs are baked until tender, making this the chicken so juicy! Serve with heated tortillas, salsa and a squeeze of lime for the perfect taco.

Tacos and fries may seem like an odd pairing, but we bet it’s exactly what you’re craving. Candice shares her secret for the perfect crispy on the outside, fluffy on the inside fries. It may surprise you – Candice freezes the fries after the first batch of frying. Then, frying them a second time gets that amazing crunchy texture.
